It is also a good source of B vitamins, especially folate, and the minerals potassium, iron and phosphorous. Lettuce is exceptionally low in calories and high in water, which means a couple of leaves on a sandwich wont give you much nutrition, but when a good portion is added to a salad, the nutritional value increases considerably. Darker varieties of greens, which are not technically lettuce, like rocket and watercress are particularly nutritious. Lettuce is rich in Vitamin C, which can help strengthen arterial walls and lower high blood cholesterol levels. The high folate levels in lettuce can also help lower levels of homocysteine, an amino acid like substance that can raise heart disease risk.

Because lettuce is rich in folate, they have applications in preventing neural tube defects. Eating folate rich foods pre-pregnancy and during pregnancy can help the fetal spinal column to develop normally.

Lettuce for Healthy Bones

One of the health benefits of lettuce is related to its high vitamin K content, which makes it useful in protecting against osteoporosis by preventing the activation of cells called osteoclasts that cause bone loss.
